AV1 files will now play on Plex. The desktop clients (Windows, Mac, Linux) now support it, as does the HTPC version. The media server itself (for transcode support for anyone who needs it or uses it for whatever reason) and mobile plex clients will all have AV1 support within the next few weeks, which should include clients for devices like the Nvidia Shield Pro (Android TV). Infusion (for iOS) has supported AV1 for a long time, as have many other players used by casuals and laymen. I have used Infusion with PMS as my metadata/file backend to manage and play AV1 on mobile devices for a long time and it has worked great (Infusion has native API support for Plex; it doesn’t connect via DLNA or SMB).
Now that Plex plays these, AV1 is pretty much ready for the primetime anime-enjoyer scene. There’s no reason to still be using AVC or HEVC, given that AV1 is the first true “open” video format completely free of any license/royalty encumbrance (similar to Opus for audio) and is also wildly better than AVC or HEVC, especially for grainy sources.
For hyper-casuals who don’t care about keeping stuff around in file archives or having a media library or complex mediaplayer stuff, VLC also now has adequate support for AV1, with the advent of the dav1d 1.0.0 codec library with all its optimizations. All anime I’ve tried in it plays back great, even high-motion-high-detail stuff, on a 10 year old CPU (granted it’s a higher-tier hexacore intel from 10 years ago, not a 10-year old baseline CPU). Many if not most desktop players also now have built-in GPU decoder support in cases where the CPU isn’t adequate alone.

Note: Audio and subtitle tracks have been duplicated in this release. There are also bloat tracks (english audio and signs + songs only subtitles). De-bloating saves a further 600 MB, de-duplication saves 300 MB. This is significant for a torrent under 3 GB already.
I have provided a powershell script for Windows users who want to easily remove the bloat for even smaller files. You must have a version of MKVToolNix installed that can read AV1 bitstreams (probably any version released within the last couple of years):

Laymen/non-techies:
Remove the # in the top line and specify the MKVToolNix install directory if you do not have MKVToolNix in your PATH enviroment variable.
Put it in a file named remove_tracks.ps1 in the same directory as your episodes, then shift-right-click in the same directory, and click “Open PowerShell window here” then type .\remove_tracks.ps1 and hit enter (the .\ is required to execute the script, or at least it is for me, YMMV).

This script will only work on these specific files. The options passed to the mkvmerge utility are specific to the files being processed. Read MKVMerge documentation if you want to modify this script for other anime releases, or if you want to leave the bloat tracks in and simply remove duplicates. The new, de-bloated files will be in a sub-directory called “new_folder” - if you want to specify a different one you can do so in the script right where it says new_folder/, you won’t hurt it as long as you leave the / in place.
