So, that's my bad then. Apparently the issue is with Jellyfin or my settings for it. It was starting the episodes with forced Signs/Songs track but JP audio, but if I play the files directly from my file explorer with MPV, it does JP + Full Subs. So yeah, sorry about that. I misunderstood what Forced means.
